From Jack Monroe’s Blog, on the theme of “Have Yourself A Cheaper Little Christmas”:
These simple mince pies use marmalade in place of orange juice and sugar, to bring the cost down, and meld the fruits together with a spicy sweetness. I?m curious about making traditional ?mincemeat? ? so expect to see a blog post on that later on! But for now, here?s a mince pie recipe so simple that you won?t even notice you?re making your own pastry?

Sory Jack, Asda 6 for a pound is a lot easier.
But less satisfying. I don’t think the point of Jack’s blog is that it’s easier just to buy stuff. I’m not on quite as restrictive budget as Jack is catering for, but her blog & recipes have inspired me to attempt more cooking/baking – i made my first loaf of bread from one of her recipes. I’ve never thought about making mince pies, but i printed this off straight away and am going to have a go at the weekend 🙂
Some of her homemade vs ready meal blog posts are quite enlightening.
Jack does have a petition going to demand parliament debate the growing crisis of people using food banks. Can forward the link if required.
I believe the debate has been guaranteed already and delivered to parliament the other day. i assume it can continue to be signed tho?
